I love this spinach salad because it's super healthy thanks to all the leafy greens and full of different textures and flavors. You can add walnuts, feta and bacon for saltiness and dried cranberries to give it sweetness or just keep it plain with mostly spinach, apple slices and your choice of dressing. I like to mix Italian and ranch dressing most of the time, or when I'm being really good I just add a little balsamic vinegar. Enjoy!

Tiff's Ultimate Spinach Salad


- 1 bag organic baby spinach - 2 large green apples, thinly sliced - half a small red onion, thinly sliced - 1 cup toasted walnuts or pecans - 2/3 cup dried cranberries - 5 ounces crumbled feta cheese, or goat or blue cheese - 4 strips of crispy cooked bacon, crumbled - 3 tbsp store-bought Italian dressing - 3 tbsp store-bought ranch dressing


1) In a small bowl whisk together ranch dressing and Italian dressing. Set aside.

2) In a large bowl add spinach, apples, red onion, walnuts, dried cranberries, and half of the feta cheese. Drizzle with the dressing mixture and toss to combine. Serve immediately, garnished with the remaining feta cheese and crumbled bacon.
